How Do I Make Jackie's Potato Soup?

Here is how you make Jackie's Potato Soup:

Boil diced potatoes in water until soft and can cut them with a fork. Drain potatoes and keep water (potato stock). In separate pot, combine onions and butter; saute' until soft. When soft, add in flour. Cook down and then season with red pepper flakes, salt, and black pepper.Add in 1 cup of potato stock to flour mixture. Next, slowly add in milk. Cook this together for 5 minutes - Stirring often. After 5 minutes, add this back to potatoes. Reconstitute potatoes with enough potato stock so that mixture will take on the consistency that you prefer. Add in ham and cheese. Stir. Allow to cook for 45 more minutes.
