1 medium onion (about 100 grams)
2 Gigante kohlrabies
1 purple kohlrabi

5 medium Yukon Gold potatoes (about 550 grams)
48 oz Swanson's Natural Goodness 33% less sodium chicken broth (could use vegetable stock to make it vegetarian)
2 tsp minced garlic
1/2 tbsp caraway seeds
big pinch of kosher salt (to taste)
2 tbsp sherry vinegar
2 tbsp white wine (optional)
Penzey's Sunny Spain seasoning to taste


How Do I Make Kohlrabi-Potato Soup?

Here is how you make Kohlrabi-Potato Soup:

Put a heavy pot on the stove over medium heat. (I used my enameled cast iron Dutch oven.)Chop an onion and toss it in the pot. Stir it a couple of times so the onions don't burn. You don't have any oil in the bottom, so they might burn more easily.Peel the kohlrabi, cut into 1/2 - 3/4" slices, then stack and cut them into sticks, then into dice. Peel the potatoes and cut them about the same size as the kohlrabi. Add them to the pot. (Go ahead and add them in as you chop them, particularly the kohlrabi. That will force you to remember to stir the veggies in the pot.) Add a biggish pinch of kosher salt.Add the chicken stock, minced garlic and the caraway seed. Stir.Let it come to a boil, then reduce to a simmer. It will need to cook for an hour or more. When you can put a fork through a biggish piece of kohlrabi pretty easily, it's done.Puree it in batches in a blender. You could use a food processor or an immersion blender, but I think a regular blender yields a smoother puree.Taste it. I added a good splash of sherry vinegar looking for brightness. It helped a little. I added another good glug of white wine. It didn't do much. I found the Penzey's Sunny Spain seasoning - pepper, lemon peel, citric acid, onion and garlic. I shook some in, tasted it, liked it, shook some more in and called it done.I put my soup mug on the kitchen scale and tare it to zero. 100 grams of soup is 37.5 calories.
