4 T. butter (I use ICBINB light) or cooking spray

1 medium onion, chopped

4T. flour

1quart chicken stock (broth) low sodium or regular

2 cups leftover mashed potatoes or prepared instant potatoes. (Use skim milk and light butter to lighten it up!)

8oz. Shredded cheddar cheese (I use 2% cheese)

Optional but I *always* use these:
1 cup cubed ham (or more to taste)
1 cup broccoli processed into teeny pieces (or more to taste)
chopped chives for garnish

Here is how you make Mom's Mashed Potato Soup:

Saute onion in butter in large pot. Sprinkle in flour and cook for 1 minute.Whisk in chicken stock and cook until slightly thickened (about 2-3 mins).
