Here is how you make Potato-and-Leek Soup/Potage Parmentier:

Combine potatoes, leeks, broth and water in lg pot. Bring to a boil over med-high heat. Reduce heat simmer 35-45 min or til veggies are tender. Without draining broth mash veggies in pan with a masher until they are fairly smooth. Add cream, butter, salt and pepper. Heat soup just to the boiling point.... do not boil.
