Here is how you make Katie's Pumpkin Soup:

Sautee the onions and garlic on medium heat in a non stick pan with the oil until the onions are transluscent. Add carrots and cook about 5 minutes or until the carrots and onions are starting get a golden color. Transfer the mixture to a 2 quart saucepan and add chicken broth and pumpkin puree. (Canned mashed pumpkin works fine). Bring mixture to a low simmer and cook for about 15 minutes or until the carrots are soft enough for your taste. Just before serving stir in the half and half.
