1 300 g. package frozen spinach
water
2 Tbsp chopped fresh mint (or 1 Tbsp dried)
1 750 g. package of plain yogurt (I use Astro Balkan style)
1 Tsp Sea Salt
1 egg
1 Tbsp flour (Tapioca Starch for G.F.)

Here is how you make Creamy Spinach and Barley Soup (or Rice for G.F.):

1. Fill 1/2 a 3 L pot (or 3 quart) with water. Bring to a boil and add 1 c. Whole Grain Barley (or Brown or White Rice for GF). White Rice will reduce the cooking time.2. Add 1 package of frozen chopped spinach & re-boil.3. Add 2 Tbsp chopped fresh mint (or more if you like).4. Reduce heat to med-low and simmer 25-30 minutes, or until your grains of choice are soft.5. Mix the package of yogurt with 1 egg and the flour (or Tapioca Starch) (this is important to ensure the yogurt doesn't curdle when added to the soup).6. Stir the yogurt mix into the soup. You may add more water to your desired consistency (the pot should be pretty full) & adjust salt to taste. Reheat a bit and serve.Makes about 12 - 1 cup servings.
