How Do I Make Red Bean, Rice and Sausage Soup?

Here is how you make Red Bean, Rice and Sausage Soup:

Cook the Zatarains Red Rice & Beans per package directions. While that is cooking, warm olive oil in fry pan. Add Andouille sausage and dice carrots, celery, peppers, and green onions, adding them to the fry pan as you dice them. After sausage browns and veggies are sauteed, add to the cooked rice. Add canned diced tomotoes with juice. Simmer on medium low heat. Drain spinach thoroughly - get all excess liquid out of spinach. Then add to the soup and heat through. Let simmer on low heat for approximately 15 minutes. Serve 1 1/2 cups per bowl and add 1/6 cup of cheese to top of soup before serving.
