Here is how you make Reduced Calorie and Sodium Gypsy Soup:

Saute onions, garlic, celery and sweet potatoes in olive oil about 5 minutes. Add all other ingredients except tamari (soy sauce). Simmer on stove until cooked (about 45 min.) or throw in crock pot and cook until tender. Add 1 T. low sodium soy sauce right before serving if using. Without soy sauce= 37.5 mg. sodium per serving.
