1- 3 lb butternut squash (=5c), de-seeded and roasted.
2 cloves garlic, minced
about a half a large onion, chopped (about 1c.)
1 tbsp butter (I'm sure you could use oil, and possibly even less, but this was perfect.)
2 cans of low sodium chicken broth (2.5c)
1.5 cups of water
1/2c half and half cream
about 3/4 tsp curry powder (I used McCormick Medium Curry Powder)- to taste

Here is how you make butternut squash soup my way:

1. I cut the squash in half, removed seeds, put cut side down on plate and microwaved for about 30 minutes, until the squash was soft enough to scoop. I also recommend to let it cool before trying to scoop it out of the shell, as I burnt my fingers trying the first time ;) I'm sure there are roasting or boiling instructions out there somewhere.2. While the squash is cooking, melt butter in big pot and add onions and garlic and saute until clear and tasty looking3. Add broth, water, squash, and curry powder.4. Bring to a simmer for about 10-15 minutes. I've used a lid to keep all the moisture in.5. Remove from heat. Blend in batches in a blender until pureed. Put blended soup into another pot on low heat.6. Add half and half. Heat and serve!Makes 5 hearty servings.
