Cut squash in half and lay flesh side down in a roasting pan. Roast at 400 degrees for 35-40 min. Let cool. Saute onion, celery and carrots in olive oil until tender. Add garlic and saute an additional 2-3 min. Scoop out squash flesh and add to the pot. Add the vegetable broth. Simmer for 30 min.
