This is a favorite Polish dish in our house. I've taken out most of the fat and substituted Splenda for sugar to bring the calories down. When we have bacon on hand, we sprinkle a few crispy bits on top of each serving along with some sour cream and parsley. The color of this soup is gorgeous, and the sweet and sour flavor is delicious.

1 dried Red Pepper (or pepper flakes), crumbled
3-4 cloves Garlic, chop fine
1/4-1/3 cup Balsamic Vinegar
3-4 Tblsp Splenda (be careful to balance vinegar and sweetness)
6 cups Red Cabbage, chop into small pieces
1 28 oz can Whole Tomatoes, crush or chop
6-8 cups Chicken Stock
Salt & Pepper
1/2 cup parsley
Sour Cream
Crumbled bacon

Sauté onion, celery, garlic and red pepper in the bacon fat (or oil of choice) until tender. Sauté the veggies with a little salt to enhance the flavors. Add vinegar and Splenda along with the cabbage, tomatoes and chicken stock. Simmer uncovered for 45 minutes or until the cabbage is tender.
