How Do I Make Light and Fresh Tomato Basil Soup?

Here is how you make Light and Fresh Tomato Basil Soup:

Saute diced onion in 1 tbsp of olive oil until soft and just starting to crisp. Add vegetable broth (4 cups) and fire roasted whole tomatoes (28 oz -- prefer Muir Glen brand). Let simmer for 20-30 minutes. Next add milk and half and half (1/2 cup each) Add salt and pepper to taste. Blend using hand blender to desired thickness. Add strips of basil (about 5 leaves or to taste) and stir to blend. Serve and enjoy. Makes about 5 servings (1.5 cups each). As an alternative I sometimes blend in one can of white beans before I puree the soup. You can hardly tell the beans are there and they add a bit of creaminess to the soup that thickens it nicely.
