17 roma or plum tomatoes
4 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp granulated sugar
3 tbsp unsalted butter
4 tbsp chopped shallots
2 tbsp tomato paste
4 cups chicken stock
1 cup heavy cream
1/4 tsp cayenne pepper
salt and pepper to taste
chopped fresh basil for garnish

Here is how you make Neelys Tomato Soup:

Makes approximately 6 servingsPreheat oven to 400 degreesSlice the tomatoes in half lengthwise and place cut side up on a baking rack over a cookie sheet. Drizzle each tomato with olive oil and sprinkle with salt, pepper and sugar. Roast tomatoes for 50 - 60 mins. Let cool slightly. Melt butter in a large pot over medium high heat and add shallots. Let shallots saute for a couple of minutes and add tomato paste. Cook for 2 mins then add chicken stock, cream and cayenne pepper. Bring to a boil then lower to a simmer for 10 mins.
