This is an amazingly easy soup to make. It doesn't sit around our house for long. In fact, it has never lasted more than a day. Try to get low or no sodium type canned vegies if you can. You can substitute the ground beef for chicken...just remember to sub the beef bouillion cube for chicken. You can also eliminate the meat and just have a good vegetable soup. Hope you enjoy it as much as we do.I like to serve this with a large green salad, and corn muffins.

1-2 lb. ground beef, browned and drained
2 - (14.5 oz) cans stewed tomatoes (can use crushed), don't drain
2 - 15 oz. cans mixed vegetables, don't drain (I use Veg-All...try Cajun style for a spicey soup)
4 beef bouillions
4 cups water
1 bay leaf
1- 15 oz. can green beans, cut (Blue Lake is best)...DRAIN
1 - 15 oz. can whole kernel sweet corn...NOT creamed, and DRAIN
1- 15 oz. can potatoes (optional)...DRAIN
1-15 oz. can Rotel tomatoes (optional, this will spice up the soup)...Don't drain
1 small can mushrooms, drained
1 yellow medium onion, sliced into 6 round slices and then quartered.

Here is how you make Cynthia's Quick Hamburger Vegetable Soup:

Brown the ground beef in skillet. Remove from skillet and drain on paper towels.In a large soup pot (that holds about 5-6 qts), begin dumping in all of the canned vegetables, bouillion cubes, bay leaf. Turn stove burner to med-high heat until it begins to boil. Then turn down to simmer. Allow to simmer for no less than 20 min. and no more than an hour. (You don't want the vegies to over cook and be too mushy).While it is simmering, go ahead and cook up the onions for about 5 minutes in the skillet that you cooked the meat in.
