Here is how you make Maria's Homemade Vegetable Soup:

Start off by cleaning and then cutting and chopping your vegetables into the size you desire. This will take the most time. Once you have all of your veggies cut, place everything EXCEPT the spinach into a good-sized pot.Turn your heat on medium and put a lid on the pot so the veggies can steam and cook. Occasionally stir and mix the ingredients around to prevent them from burning or sticking to the pot. Now is the time to add in your seasonings. You can make this soup as spicy or tame as you want.Once your vegetables are cooked through (the carrots and potatoes will take the longest, if they are cooked then you are ready for the next step), add your can of diced tomatoes (the juice, too!) and your spinach. Allow that to heat through.
