Add the oil, and add the vegetables as you dice them up, stirring from time to time, starting with the ONION, then CELERY, then CARROTS, then RED BELL PEPPER, then add the minced GARLIC. After adding the garlic, saute/stir for 1 more minute. Add the BROTH - a little at first to deglaze the pan, then add all the rest of the broth. Bring the broth to a boil while you dice the ZUCCHINI. Add 1 cup of QUINOA to the boiling broth and cook for 20 minutes. Add 1 cup of frozen CORN, 1 full can of BLACK BEANS (drained), 1 full can of diced TOMATOES (not drained), and finally add the chopped SPINACH. Season with ground CUMIN and fresh ground BLACK PEPPER. Shut off the heat and let it cool for about an hour, then transfer to containers of 2-servings each. Chill the containers in the refridgerator overnight before moving to the freezer.
