2 tsp. cumin*
1 tsp. granulated garlic*
1/2 tsp. dried thyme
2 tsp. worcestershire sauce*
2 tsp. (or to taste) salt*
1 tsp. pepper*
several dashes hot sauce*

Here is how you make Vegetarian Lentil And Vegetable Soup:

Saute carrots, celery & onion in EVOO while you mince garlic and slice mushrooms, about 5 min.Add garlic and stir, then add mushrooms. Let cook 2-3 min.Add lentils and stock and then bring to a boil.Turn heat to low and simmer for about 20 min.Add spices and tomatoes, and continue to cook for another 30 min.The soup should be about ready, but I like to check the seasoning and add about 1/2 -1 tsp. salt. Also, check the consistency. Usually, I like to add more water (about 2 cups) to thin the soup, and then re-season. Simmer another 10 min. for flavors to blend.For a less "tomato" flavor, you can use a few fresh tomatoes or some tomato paste. It still has depth, but the other veggies really shine through!***Freezes very well.Makes about 12 - 12oz. servings with water added.* I never measure anything, so these quantities are my best guess.
