Use rice cooker or just boil rice til tender.Cut up all veggies to desired chunkiness. Combine veggies into large pot with 32 oz of chicken broth (low sodium)Add beans (I used black-eyed peas) and tomato paste (no salt).Rice should be done by this point add it into pot.Stir all ingredients together and place on stove at med-high setting.Once soup starts to boil let it boil for a couple of minutes then turn heat down to low-med. Let it cook for about 20-30 minutes or until veggies are tender.Serves 10 bowls of soup.Add or subtract what ever veggies or meats you have.
