Here is how you make K&C's Spinach and Artichoke Dip:

Preheat oven to 400 degrees.Combine 1/4 cup (4 Tbsp) vegetable oil and flour in a saucepan over medium heat. Stir constantly for 5-6 minutes. Whisk in milk and bring to a boil. Season with salt and cayenne. Simmer for 5-6 minutes, or until thick. Remove from heat and stir in cheeses. Set aside.In a saute pan, heat 2 Tbsp vegetable oil. Stir in handfuls of spinach at a time. Add garlic and artichoke hearts and saute for 2 minutes. Season with salt and cayenne. Remove from heat and turn into a mixing bowl. Fold the cheese sauce into the vegetables.Turn the mixture into a baking pan.
