Here is how you make Spinach and Mushroom Quiche:

1 9 in. frozen pie crust.1 cup fresh baby spinach washed, with stems removed, and shredded2 large, fresh mushrooms washed, and diced1 tbsp chopped onion4 slices Swiss cheese cut into small squares1/2 cup half & half1 cup liquid Egg substitute1/4 tsp salt1/4 tsp pepper1/8 tsp cayenne pepperHeat oven to 425. Toss onions, spinach, and mushrooms together, and spread evenly across bottom of pie crust. Top with chopped up Swiss cheese slices. In a separate bowl mix egg substitute, half & half, pepper, salt, and cayenne pepper with a wire whisk., and pour over the vegetables.Bake 15 minutes at 425 degrees, reduce to 300 degrees and continue to bake for 30 minutes. Remove from oven when the quiche is golden brown, and let stand for 10 minutes before cutting.
