Thoroughly wash spinach. Blanch in boiling water for no more than 3 minutes(you don't want it too soft; it should still have some 'crunch' to it.) Drain spinach and wash in cold water. Mix together spinach, thinly sliced green onion, crushed garlic, sesame seeds. Add soy sauce and sesame seed oil to taste. I would not recommend using the full tablespoon of either of these ingredients, it will be too salty and greasy if you do. Mix well and chill in fridge before serving.
