Heat large sauce pan over med/high heat. Add olive oil and coat pain. Saut? onion, carrot, garlic and jalape?o for 6 minutes or until tender (and onion is translucent). 2. In a separate pan, cook rice according to directions to yield 3 cups cooked rice. 3. Stir in broth, potato, cumin, chili powder, turmeric, salt, tomatoes and chickpeas. Bring to a boil, then cover and reduce heat to a simmer until potato is tender. 4. Place 1/2 c. rice off to one side of the bowl then add stew. Top with yogurt and fresh or dried cilantro (I use fresh).
