Prepare sweet potatoes by dicing and baking or microwaving. (Microwaving the diced sweet potatoes for about 3-5 minutes will be sufficient. Prep time will be longer if you choose to bake potatoes rather than microwave.) 2. Steam corn3. While corn is steaming, saute 4 slices of bacon in the pot you will use for the soup. Set aside bacon4. In same pan, saute onion and half of thyme (Add olive oil or spray olive oil if low fat or veggie bacon is not enough for onion not to stick). Reduce heat and add 1/2 of corn.5. In a cuisinart or using a handheld mixer in a separate container, cream 1/2 of the steamed corn with 1 cup of skim milk. Add 1 cup of sweet potatoes and continue to mix to desired consistency.6. Add creamed corn/sweet potato mixture, remaining sweet potatoes, 2 cups of broth, and remaining thyme to onion and corn mixture. Bring to boil and then simmer 15 mins. 7. Use the extra cup of broth on hand if the soup is too thick or if you want to increase the volume of soup.
