This is a great alternative to eating a shelled taco. I don't recommend you eat it often but 1 time per week might be okay. If you are taking hCG you would replace the 1 tbsp of milk you are allowed and replace it with the 1/4 tbsp of reduced fat sour cream. Salsa isn't permitted but 1 tsp didn't seem to make a difference for me.

Cook and brown 1-2 pound of lean beef or other desired meat (What ever you do when you make tacos for your family)
Add low sodium taco seasoning to browned meat following package directions.

On the side prepare vegetables:
Dice 2 medium tomotoes
1 head of lettuce - Carefully separate lettuce leaves
3 celery stalks - Sometimes I chop celery up fine and add

measure out 1/4 tsp reduced fat sour cream or 1 oz cottage cheese
1/4 tsp measure out salsa or 1/4 cup sauted tomatoes with cilantro

Here is how you make Lettuce Taco:

So you take the outside layers of the lettuce head and remove them slowly one at a time so not to tear them. (I usually only do two because I let my family use taco shells) (cut up the remaining lettuce)Make your taco meat as usual mixing in one packet of reduced sodium taco mix per package directions. If you want you can make your own with chili powder, cumin, and crushed red pepper and fresh tomatoes.Take a lettuce leaf and add at least 2 shredded lettuce leaves to the center and then place 3 oz of taco meat mixture into the center of the lettuce leaf (this will absorb some of the juices from the meat mixture) then add 1/4 cup of diced tomatoes or more if you like you can even add chopped celery. Add a small amount of reduced fat sour cream and salsa (if you are worried about using these products I suggest reducing your meat to 2 oz of cooked meat with 1 oz cottage cheese and adding heated diced tomatoes) Anyways - once you have all you need in lettuce leaf roll ---- devour because trust me it is surprisingly amazing. You can always replace the lean beef with chicken or fish. Just be imaginative you will love the taste and feel like you are eating what your family eats only different. I feed my family regular taco shells. Give it a try and see what you think. just an added tip - the larger the lettuce leaf the more veggies you can fit in it.
