Got the base for this from a Paula Deen recipe and put my personal touches plus made adjustments so that it will feed a large crowd. Huge hit at a pot luck picnic over the weekend. Everyone raved about them and there was nothing by crumbs left to take home. Plus they are relatively easy to make.

The ingredients for April's Tomato Canapes are:

2 1/2 c. Tomatoes (I like to use a variety from my garden of cherry, grape, pear, sungold, and plum)
2 tbsp shallots, minced
1 tbsp garlic, minced
1/4 c. fresh basil leaves, chopped
1/2 tsp garlic powder
salt and pepper to taste
4 packages of mini phyllo cups (60 total)
1 cup packed shredded part-skim mozzarella
1/2 cup light mayo (I like the smart balance)
2 tbsp italian seasoned bread crumbs
2 tbsp grated parmesan cheese
1 tbsp italian seasoning
4 to 5 slices of bacon, cooked and crumbled into bits

Here is how you make April's Tomato Canapes:

Prepare bacon however you prefer. I like to put them on broil pan in oven at 350 for 10 to 15 min or so. You can also put them in microwave layered in between paper towels - in my micro - it only takes 2 min on high.Prepare garlic, shallot, tomatoes, and basil. Wash tomatoes and slice in half. Put in food processor with minced garlic, minced shallot, and chopped basil. Use chop mode to dice the mixture. Don't let the tomatoes become pureed - they should be chunky. Place mixture in a colander to drain off excess liquid. In colander, season with salt, pepper, and garlic powder and toss.In a separate bowl, mix together mayo, mozzarella, bread crumbs, and italian seaoning.To work with mini shells - leave them in the trays until you are ready to bake. Fill each cup with a tbsp of tomato mixture. Then frost with a tsp or so of the mozzarella mixture. Sprinkle each cup with some bacon bits (maybe a 1/4 tsp or so). REMOVE SHELLS FROM TRAYS and carefully place on baking sheet. Baked the filled shells 10-12 minutes. Serve hot. They were pretty good at room temp at the picnic too but awesome warm.
