The ingredients for Get Your Veggies Turkey Chili are:

1 large onion, chopped
2 cloves garlic, minced or pressed
2 bay leaves
2 green peppers, seeded, chopped
2 stalks celery, chopped
1 c chopped mushrooms or canned
1 jalapeno pepper, chopped
1 can kidney beans, rinsed and drained
1 can black beans, rinsed and drained
1 can chickpeas, rinsed and drained
3 c water or low fat chicken stock
2 28 oz. plum tomatoes, with juice, chopped
1 6 oz can of tomatoe paste
1 lb. ground turkey 97% fat free (use 1 lb. tofu, crumbled for
vegetarian version)
1 can corn or frozen equivalent
1 apple, chopped
2 T chili powder (you can adjust to your liking)
2 t coriander ( I also add 1 t cumin for smokey flavor)
2 T Dijon mustard
1 T blackstrap molasses
1/2 c chopped parsley or cilantro
Salt and Pepper to taste


How Do I Make Get Your Veggies Turkey Chili?

Here is how you make Get Your Veggies Turkey Chili:

Crumble and cook turkey in large soup pot, you may have to add a little olive oil as turkey has very little fat in it. Drain off any extra liquid. Add chopped onion, garlic, bay leaves, bell peppers, celery, carrots, mushrooms, and jalapeno, cook on medium for 5 more minutes. Add beans, water, (or broth), tomatoes, tomatoe paste, (if you are using tofu instead of ground turkey, add now), corn, apple, remaining seasonings, mustard, molasses, and parsley or cilantro. Cover and simmer on med, low heat for 30-40 minutes, stirring ocassionally. Season with salt and pepper.You can serve this on top of a bed of bed of brown rice and greens for an even healthier dish!You can garnish with sliced avocado, chopped raw onion, minced jalapenos, or sour cream.This dish is full of fiber, and nutrition and any left overs store well.
