2 slices turkey bacon
1 onion, chopped
2 celery stalks chopped
4 cloves garlic, crushed
1 med or 3 small zucchini, diced
1bay leaf
1 can white kidney beans, drained and rinsed
1 can red kidney beans, drained and rinsed
8 cups water
6 tsp vegetable or chicken bouillon
1 1/2 lbs. chicken or turkey breast, cut into 1/2" chunks
3/4 cup ditalini pasta
2 cups frozen green beans
3 Tbsp fresh basil
2 Tbsp Parmesan cheese

Here is how you make Turkey Minestrone:

Saute the turkey bacon in the olive oil for 4 minutes. Add the onion, celery, garlic, zucchini and bay leaf and saute for another 5 minutes.Add beans, water and bouillon and bring to boil over high heat. Add cubed meat and cook for 10 more minutes.Lower heat and add pasta and green beans.
