Here is how you make Priya's Sauteed Beet Greens (Vegetarian - American Style):

Separate the beet greens from the stems. Cut the stems into 1/2 inch pieces and finely chop the beet greens. Heat the oil and add the stems to cook for about 3 minutes or until crisp. Add the greens and saute, adding salt and pepper during the process. Splash coconut aminos for additional flavor and to deglaze the pan, if needed (I usually throw tofu or beans in the dish and occasionally need to deglaze, you may not need this step).Once the greens are reduced to your liking, stir in balsamic vinegar and serve.
