1/2 lb. Bay Scallop
1/2 lb. Medium Shrimp (deveined, shelled)

2 tbsp. Minced Ginger
2 tbsp. Minced Shallot
1 tbsp. Soy Sauce
2 tsp. Rice Wine Vinegar
40 Wonton Wrappers (nutritional value may change depending on which wrapper you're using)
4 Shiitake Mushrooms
2 Egg Whites
Cabbage leaves





How Do I Make Pork and Seafood Shui Mai?

Here is how you make Pork and Seafood Shui Mai:

1) If you are using dried shiitake mushrooms, soak them in hot water for 10 minutes, or until tender. Then chop them into small pieces or dice them with a food processor.2) In a food processor, pulse pork, scallop, shrimp, ginger, shallot, soy sauce, vinegar, egg whites, and shiitake mushrooms to combines, and for texture. *Alternative: If you don't have a food processor, you can finely chop up everything and mix it together really quickly.3) Hold a wonton wrapper, and spoon the mixture into the center of the wrapper. Leaving the top open, wrap the edges of the wrapper around the mixture and pleat the edges. Top each shui mai with a frozen pea.4) Line the upper pan with cabbage leaves or parchment paper. Put the shui mai onto the leaves/paper, making sure that they don't touch eachother. Fill the lower pot with water and steam for about 10 minutes.For those of you who do not understand step 4: -Steam pots are 2 tiered pots, the bottom pot for holding and boiling water, and an upper pan/basket which has holes on the bottom so that the steam from the lower pot of boiling water will steam/cook whatever is in the upper basket. I line the upper tier with cabbage leaves so that it is easier to take out of the pot. These things are really delicate so its hard to take them out without ripping them if they stick to the steaming pan.ENJOY!
