Fat Free Milk or Plain Light Soy Milk 2 10oz. packages Frozen Spinach 1 c Mushrooms, Canned 10 Corn tortillas How Do I Make TK's Enchilada Bake?Here is how you make TK's Enchilada Bake: Makes 10 servings.Preheat oven to 350.Defrost spinach, then squeeze excess liquid from spinach.On medium-high heat, cook onions until translucent. Add ground beef until browned. Drain any excess fat. Add 3/4 package of taco seasoning (following the directions on the package). Simmer for 5 minutes.In a saucepan, mix Ro"tel, tomato paste, V8, milk, and 1/4 package of taco seasoning. Bring to a boil, then lower heat and simmer for 2 minutes.Cut 8 corn tortillas into halves or quarters. Place four of the tortillas in a small casserole dish to cover the bottom. Then spread a layer of the beef mixture. Top with all of the spinach and 1/2 of the cheese. Then pour a thin layer of the sauce. Make another layer using 4 more corn tortillas, beef mixture, mushrooms, and the rest of the sauce. Place the remaining 2 corn tortillas (whole) on top and sprinkle the top with the remaining cheese.
