Here is how you make Green Bean and Ham Stew:

Cook onion, thyme and salt in olive oil until soft.Add ham and stir until heated through. Add stock and potato. Bring to a boil and reduce to a simmer. Cook for about 25 to 30 minutes, until potatoes are softened enough to start thickening the stew.Add green beans and continue cooking for about 20 minutes or so. The beans should be soft and have lost that squeaky feeling. Add the carrots, dijon and pepper to taste. Cook about 10 minutes more.
