The ingredients for Bridget's Spicy Shredded Beef are:

2 lbs Chuck Roast trimmed of the fat or other inexpensive wsell trimmed cut of beef. (I buy the family packs and just use half of it and freeze the rest)

1 leek chopped (no stem) (you can use an extra onion and garlic if you do not have this)
1 onions chopped
2 tomatoes chopped
1 bell pepper chopped
1 yellow pepper chopped
1 Jalapeno pepper chopped
6 pieces of cilantro chopped (entire leaf & stem)
2 tablespoons of Montreal Steak Seasoning
1 tablespoon of Ground Pepper
2 teaspoon of Chili Powder
1 tablespoon of Garlic Powder
2 tablespoon of Ground Cumin
1 teaspoons of Cayenne or Red Pepper (if you want it more spicy)
1 cans Beef Broth low sodium (I used the Kroger brand)


How Do I Make Bridget's Spicy Shredded Beef?

Here is how you make Bridget's Spicy Shredded Beef:

Prep your veggies. You can make them large cuts as they will boil down anyway.Cut out most of the fat off your meat. Leave a little marbled, but remove the thicker fat pieces.On the stove heat a large non stick pan or Cast Iron Skillet to Medium High. Let the pan get very hot, but do not put anything in it. No oil, etc.Combine Montreal Steak Seasoning and Pepper and mix in a bowl that can hold up to 4 cups. Take one tablespoon of the mixture and rub it on the meat by hand. Leave the rest for the rest of the recipe. Place the meat in the hot pan on the oven and brown slightly. This will sear in the flavor onto the meat. Brown on each side then remove meat from heat.Put veggies then meat in the crock pot.Add the rest of the seasonings to the Montreal Steak & Pepper Mixture in the bowl. Add 1/2 can of beef broth to the mixture, stir and pour over meat. Add the other half of the can of beef broth to the mixture to get the remaining seasonings out of the bowl and pour over the meat.Set your Crock Pot to on low for 6 hours. If you will be leaving your crock pot on for longer, you will need to add an extra ? cup of water. When cooking is done, take the meat out and shred the beef with 2 forks. You can either stir in the remaining broth and veggie chunks or I like to put my broth & veggies in a blender on liquefy first. Then I add to my beef. This will keep it juicy and keep the spices in it.Makes 16 2-oz. servings. (This is a little bigger than a Taco Bell serving who puts 1.5 oz in)Use low carb or corn tortillas. You can get 2 corn tortillas for about 80 cals vs one flour for 110 cals. I recommend pan frying on a non stick or cast iron pan (no oil) the corn for better flavor.Serving Size: Meat only.
