I just threw in a bunch of stuff from the pantry with some stew beef that I bought yesterday on markdown b/c it was close dated. The pics not great but just to give you an idea. I'd say each serving was about 2 cups but I didn't measure exactly. I portioned out 5 servings and there was half the soup left so that's where I got 10 servings from.

I usually just throw in whatever I've got. Tomatos are great in it. I put in some yellow ones that I had frozen from our garden.

stew beef (I used 3/4 of a pound pkg)
onion - diced
2 tbs of butter (not manditory but in NI)
8 beef bullion cubes (mine was a little salty so you may want to go low sodium)
can corn
can english peas
can chickpeas
5 med potatos diced
8 to 10 cups water


How Do I Make Beef Stew from the pantry?

Here is how you make Beef Stew from the pantry:

*put bullion cubes in a few cups of boiling water to disolve* saute onion with half the butter till almost translucent* put beef in large pot that's already heated to med-high. Onion can be cooked in pot first if you like. brown beef* add onion if it was cooked separately* pour bullion mixture along with the rest of the water into the pot* add canned items. Tomatos are also a good addition* add potatos* cook for about 30 min*To thicken stew: This is what I did towards the end so it's this way in NI. Make a roue (sp?) by putting remaining butter in hot nonstick skillet with about a cup or so of the liquid from the stew. Sprinkle flour over the mixture and stir. It will eventually ball up together and there will be no liquid left. Mash it around in the pan till the white is all gone for a min or so. After that, add about another cup and a half of liquid from the stew to the roue. It'll be chunky so just smush it around till it's mostly disolved. Add this to the stew pot. * Low fat way to thicken. You could also mash the chickpeas up really good and they'll thicken the stew. I like the chickpeas whole so I did it with flour. That's also a great way to sneak in beans on kids as well :)* Let it simmer for until the potatos are at least fork tender and beef is done through.Number of Servings: 10Recipe submitted by SparkPeople user STACYE13.
