4 cups baby Carrots, raw
2 large Onions, halved,cut into sixths and halved again
5 cloves Garlic minced or pressed
1 tbsp dried Thyme or 3 TBSP fresh Thyme leaves
1 tbsp Smoked Paprika
1 cup Parsnip chunks
12 cup Beef broth, bouillon, consomme
2 tbsp worcestershire sauce
2 tbsp Balsamic Vinegar
2 tbsp Flour, white
4 cup diced Potato, raw I used 24 small whole white rose potatoes
2 tbsp Tomato Paste
3 tbsp Canola Oil
Salt and pepper to taste

Here is how you make Rainy Day Beef Stew:

Saute cubed beef in oil in batches to brown. Add minced garlic to large pot with a dab of oil, saute one minute, add beef, thyme, paprika and veggies except potatoes, sprinkle with flour, saute a couple of minutes, add broth, vinegar, tomato paste and worcestershire sauce, salt and pepper. Simmer for 1.5 hours,add potatoes and simmer for another hour. Adjust seasoning with salt and pepper to taste.Serving Size:?Makes 8 hearty 2.5 cup servings
