2 ribs celery, cut in 1/2-inch pieces
1 bay leaf
4 springs fresh thyme
2 cups merlot, or other red wine
2 cups beef broth

Brown the meat in vegetable oil. Don't buy stew meat, buy a chuck roast & cut it up. Remove meat from pan. Add the onions, salt and 1 T butter 2 T flour, cook 3-4 minutes. Add 1/2 bottle red wine. Reduce by 1/2, takes about 10 minutes. Add 2 chopped carrots, celery and beef (with all the juices), Bay leaf and tied up thyme, beef broth. Cover. Simmer 1 & 1/2 hours. Uncover and simmer 1/2 hour more. Taste and adjust seasoning. Serve over mashed potatoes, do not add the potatoes to the stew.Try this over the Horseradish Smashed Potatoes.
