1 cup of sliced mushrooms
32 oz Swansons Fat Free 50% reduced sodium Beef broth
1 Tbsp Extra Virgin Olive oil
2 tbsp flour
Pam Spray
1 Tbsp Mustard
1 Tbsp Ketsup
1 Cup light Sour Cream
1 tsp Cayenne powder - or sub Worsterchire sauce
salt and pepper to taste
Cornstarch mixed w/ water to thicken it at the end

Makes 6 servingsChop mushrooms chop meat into stew sized pieces if U bought the roastAdd Olive oil to large pan and heat on med/highprepare pan to saute mushrooms with a few good sprays of PAM. heat on mediumAdd meat, salt & pepper to the big pan.Add mushrooms to Pam pan.Sear meat until no more pink is showing and stir the mushrooms, add more Pam if needed.When there is no more pink on the meat add the flour, stir and cook 2-3 minutes until flour is brown.Add Broth to the beef and scrape the bits from the bottom. Add mushrooms to the beef pan. Bring it up to a simmer. Heat oven to 375. When oven is ready, cover the pan and put it in for 50 - 60 minutes. If you want to serve No- Yolk egg noodles or rice with this dish now is a good time to start it.Pull out the beef pan carefully and place on the stovetop on medium/ low. Add Mustard, Ketsup, cayenne and S & P to taste. Mix well. Add Sour cream and stir gently. Cook 3-4 minutes. If Sauce isn't thick enough add the cornstarch and water mixture and heat to bubbling.
