What Are The Ingredients For Beef with Tomatillos Recipe?

The ingredients for Beef with Tomatillos are:

1 piece of beef for braising of 3-3.5 pounds (blade)
1 medium onion chopped
2 garlic buds minced
4 Italian or mild sausages (I would not use those with a lot of herbs)
? cup beer
1-2 fresh Serrano peppers (hotter than a jalapeno) minced
? cup fresh coriander chopped (I put in cup and use scissors)
3 lbs of fresh or frozen tomatillos (not easy to find). I replaced with cherry tomatoes which are really not the same but worked out well. I used 1 small basket of these.
1 cup of veal stock
Vegetable oil
Salt and pepper

Here is how you make Beef with Tomatillos:

In a large casserole that can go in oven, heat oil and brown the meat on both sides. Remove meat from casserole.In the same casserole, heat onions and garlic slowly for about 3 minutes or until there is a light coloration. Cut the sausages in four sections and cook with onion/garlic mix for about 5 minutes. Then, add the beer and ensure that you scrape the bottom of casserole to get all the meat remains. Reduce mixture by half volume. Add all remaining ingredients except the veal stock and mix well.Put back in the mixture the beef and add enough veal stock to cover about ? of the meat. You can add either more veal stock and/or water if necessary. Bring to boil, cover and put in pre-heated oven at 350 ?FIt is even better served the next day with fresh tortillas and sour cream.
