1/4 teaspoon freshly ground black pepper or to taste
1 cup whole grain farro
1 cup chopped fresh carrots
3 cups beef stock (Kitchen Basics)
5 cloves fresh peeled garlic
1 1/2 pounds freshly ground chuck

Heat 10 inch cast iron skillet over medium heat. Add mushrooms and peppers and sprinkle with olive oil. Saute until beginning to soften, adding oil as necessary to prevent sticking. When mostly soft, add scallions and stir fry another minute or two. Remove to a bowl and take skillet off the heat.Meanwhile, add one cup farro to saucepan with 3 cups low sodium beef broth and one cup finely chopped carrots and 5 cloves garlic. Bring to a boil and reduce heat to simmer, cover and simmer for 45 minutes. Drain any excess liquid.Reheat skillet over medium high heat and add ground beef. Stir fry until browned and no longer pink. Mix all components together and serve. about 3/4 cups each
