1Tbsp Coconut Oil

1 c. zucchini, chopped
1/2 cup carrots, chopped
1/2 cup asparagus, chopped
1 large plum tomato, chopped
150 g lean ground beef
30 g Parmesan or Pecorino cheese, shredded
1 - 250 ml container Egg Beaters
2 whole eggs


How Do I Make Beef and Veggie Frittata?

Here is how you make Beef and Veggie Frittata:

Preheat oven to 500F. In a large skillet, heat olive & coconut oils. Add onion & garlic and saute lightly before adding ground beef. Add salt, pepper, tabasco & Italian Seasoning to taste. When beef is browned, add the remaining vegetables and saute lightly. Meanwhile, whisk together the eggs and half of the cheese. Add to skillet and incorporate thoroughly. When everything is coated in egg and eggs begin to set, pour into an 8 X 8 baking pan, top with the remaining cheese and pop in the oven for about 15 minutes, or until egg is firmly set & the Frittata is nice and brown.Let sit 10 minutes before cutting.Number of Servings: 4Recipe submitted by SparkPeople user SUSEN_CALGARY.
