Here is how you make Veggie Egg Casserole:

Dice and saute chorizos in a pan. In a mixing bowl, blend together eggs and ricotta cheese. Lightly grease a 10x13 pan with olive oil, add frozen vegetables, chorizo, egg mixture and mozzarella. Bake at 350 for 45 minutes, add remaining cheddar cheese to top of casserole and bake for an additional 5-7 minutes or until eggs are done.
