How Do I Make Tanya's Best Chili?

Here is how you make Tanya's Best Chili:

Soak dry kidney beans overnight (for about 24 hours). Change water several times. Simmer for 1.5 hours, in an excess of fresh water with 1 tsp salt. While the beans are cooking, in a separate pot brown ground beef with chopped onions, celery and jalapeno. Add diced chayote and simmer for 15 minutes. Add coarsely chopped beet greens (actually i used Swiss chard) on top (don't mix in), cover and simmer for another 5 minutes. Add canned tomatoes, frozen corn, cooked kidney beans, and spices. Bring to a boil and simmer 5 more minutes.
