12 oz red wine or 1 bottle full bodied/flavor beer of choice
1 T red wine vinegar

In a large pot or dutch oven, cook the ground meat over medium heat. Drain and set aside reserving a 2 tablespoons drippings to cook the onions with. Once the onions are soft and translucent add in the wine or beer to deglaze scraping the bits off the bottom of the pot. Add the tomatoes and all the spices including the cayenne if you so desire.Bring to a boil and then let simmer for 1 and half to 2 hours, covered.Uncover and continue to simmer for 10 to 30 minutes more.
