454g extra lean ground beef
2 cloves garlic, minced
1 medium onion, finely chopped
227g mushrooms, chopped
2 cups shredded carrots
680 ml low sodium plain tomato sauce (1 large can)
2 cups fresh baby spinach, chopped or torn into manageable pieces
Salt and Pepper
1 tbsp dry or 2tbsp fresh oregano
1 cup fresh grated parmesan
475g light/4% ricotta
150g part skim mozzarella, shredded
1 bunch fresh basil
9 lasagne noodles (whole wheat noodles work too)

1. Heat oil in large pan or saucepot on medium-high heat.2. Add ground beef, stir to break apart and cook until browned nicely.3. Add garlic and onions to the beef. Continue cooking on medium heat, until softened.4. Add mushrooms and cook until mushrooms are softened and golden delicious.5. Add shredded carrots and mix well6. Pour in tomato sauce and give a good stir to incorporate, continue cooking at medium-low heat.7. Add spinach leaves, season with salt and pepper, and add oregano. 8. Stir in parmesan and continue to simmer, uncovered until ready to assemble lasagne.8. Cook noodles as per directlons on the box. Drain noodles and shock with cold water to stop the cooking process and to allow for safe handling of noodles.Preheat oven to 350F9. Using some of the sauce, thinly coat the bottom of the lasagne pan.10. Place the first layer of three noodles in the bottom of the pan (on top of the sauce coat).11. Spread ricotta over noodles (use about half the ricotta), then add sauce (about 1/3 of what's left), then add a layer of fresh basil leaves over the sauce.12. Place another layer of three noodles on top, then the remaining ricotta, sauce (1/2 of what's left), basil, noodles, and then the remaining sauce.You should now have, from bottom to top layers: sauce, noodles, ricotta, sauce, basil, noodles, ricotta, sauce, basil, noodles, sauce.13. Top with mozzarella.14. Tent with alluminium foil.14. Pop in a 350F oven for about 45 minutes 15. Remove foil and bake uncovered for additional 15 minutes, or until mozzarella is bubbly and golden (a minute or two under the broiler always helps to get more colour)16. remove from oven and allow to sit uncovered for 10 minutes before cutting. 17.
