Here is how you make Enchiladas:

makes 6-7 enchiladas depending on how big you make them. 1 enchilada could possibly be too big for some and you could eat 1/2 as one serving.Brown the meat and onions, then add the refried beans...in seperate sauce pan heat the rotel, soups, & enchilada sauce.Fill tortilla's with 1/6 of meat and bean mixture, add cheese, roll and place in 9x13in casserole dish. should be able to make at least 6 sometime I get 7 in there...Pour the soup and sauce mixture on top, add 1/2 cup milk if you desire a thinner sauce.Bake uncovered for 30-40 min.Let cool (sauce will thicken, we actually like it better the next day, after it's been in the refridgerator!)Enjoy!Number of Servings: 6Recipe submitted by SparkPeople user AGALZKI.
