Trader Joe's Tomato Basil Marinara, 2 cups
*Fennel seed, 1 tsp
Cloves, ground, 1 tsp (to taste)

Cottage Cheese, Nonfat, 2 cups
Mozerella Cheese Shredded, 2 cups
Parmesan Cheese, grated, 2 oz

Here is how you make Brigitte's High Protein/Low Carb Eggplant Lasagna:

Brown ground beef in a pan with seasonings and drain excess oil. Add marinara sauce, ground clove, and let simmer while you brown eggplant.Preheat the oven or toaster oven to 450 degrees F. Brush both sides of the eggplant with the garlic oil. Arrange on a baking sheet and bake until browned and almost tender, 10 minutes, turning once. Mix cottage cheese and 1 cup of mozerella in a bowl. Spread some meat sauce mixture at the bottom of an oven proof dish or pan with a lid. When the eggplant is browned place a layer of eggplant on the sauce, then ? meat mixture, then all of the cottage cheese / mozzarella mixture, a second layer of eggplant, then remaining ? meat sauce mixture, and finish with a cup of mozzarella mixed with Parmesan cheese.
