I omitted the saltines which are high in fat and calories. I used oats instead to soak up the moisture and hold the loaf together. The idea for oats came from an old recipe from a great aunt. If you don't have a heavy duty mixer (such as a Kitchenaid stand mixer), it's really best to mix using your hands and squeezing through your fingers. I let the ingredients warm up at room temperature for about an hour so it won't chill my hands too much. Divide mixture into 2 meat loaves - If baking both at the same time, you'll need a large pan. I use the oven broiler pan. (I add foil to the bottom for easy clean up later.)
