1 tbsp olive oil
2 c. salsa
3 tbsp lime juice
3 c. beef stock
2 onions, sliced
3 cloves garlic, diced
1 tsp cumin
1/2 c. flour
seasoning salt to taste
1c. each- zucchini, mushrooms, other veggies (optional)

Here is how you make Mexican Stewed Steak:

Toss beef pieces in flour & seasoning salt. Heat oil in dutch oven & brown beef on all sides. Add onions, garlic and veggies & sautee until softened. Stir in remaning flour. Add lime juice, salsa, broth & cumin, stirring brown bits from the bottom of the pot. Bake in 300F oven for 1.5- 2 hrs, until beef is tender. Stir once or twice during cooking. May add additional beef broth during cooking if required.
