- Marsala Wine (1 Cup), alcohol cooks off, but if you don't want to use wine you can substitute grape juice
- Grated Parmesan Cheese, 1 cup
- White Flour, 2 Tbsps
- 93% Lean Ground Beef, 8 oz
- Tomato Paste, 6 oz can
- Red Potato, one medium sliced lengthwise into strips
- Onion, one large
- Eggplant, 1/2 whole, skin on
- Margarine, 2 Tbsps
- Large Eggs, 2 fresh, beaten
- 1% Milk, 2 cups
- Nutmeg, 1/2 tsp
- Cinnamon, 1/2 tsp
- Black Pepper to taste


How Do I Make Milad's Moussaka?

Here is how you make Milad's Moussaka:

- Cut eggplant lengthwise, and add to a glass or ceramic dish lightly coated with cooking spray or olive oil. Broil in oven for a few minutes or until golden brown. Flip all pieces and brown opposite side. Remove and set aside to cool.- In a frying pan, saute onions until golden brown. Add beef and cook until no longer pink stirring frequently. - Add cinnamon and nutmeg to mixture and incorporate thoroughly.- Pour Marsala wine (or grape juice) over mixture, stir to incorporate and saute until wine cooks off. Remove from heat and set aside.- To make the Bechemal sauce begin by heating milk in a saucepan until just before simmering. Melt the margarine in a frying pan and add flour to make a rue. Cook the rue until lightly browned. Slowly add in milk whisking till all paste is dissolved. Add beaten eggs and stir until the sauce begins to thicken. Remove from heat and allow to stand for 10 minutes to thicken further.- Lightly oil a 9"x9" pan. Layer potato strips to cover bottom of the pan. Next alternate layers of eggplant and beef mixture until pan is filled. Add the Parmesan cheese as the next layer. Finally, pour the Bechemal sauce over the top and spread evenly. Garnish with parsley. - Bake moussaka at 375 for one hour. - Remove from oven and let stand for 10 minutes before cutting. Makes 9 3"x3" servings.
