Here is how you make Salisbury Steak with Mushroom Gravy:

Saute onions in oil over med. heat until browned - 5-8 minutes. In a large bowl, combine the ground beef, ground turkey, HALF of the sauteed onions, bread crumbs, eggs, 1/4 C beef broth. Add salt and pepper to taste if you like (I use Trader Joe's 21 Seasoning Salute instead of salt).Shape into 8 patties. In a large frying pan, brown both sides of patties, then set aside.Add mushrooms to the pan, saute 2-3 minutes, and season to taste. Add patties back to skillet.In a small bowl, blend flour and remaining broth. Blend until smooth. Add remaining onions, tomato paste, vinegar, water, mustard, and worcestershire sauce.
