Here is how you make Healthy Country Omelet:

Combine red pepper, mushrooms, scallions and canadian bacon in a pan sprayed with olive oil. Saute them to your preference then add spinach leaves.In a small dish combine egg and egg whites and blend together. Pour into a pam sprayed pan. Cook on medium heat until all the way cooked without flipping it over. Add vegetable and meat mixture to one side of omelet then add the cheese. Fold egg over other side over mixture.
